Also different methods of making ice cream, sherbert, etc. These receipts are from the best New York, Philadelphia, and Boston Confectioners, and include a large number from the French and other Foreign Nations. Published by J.E. Tilton and Company Boston c. 1866 (7 3/4" x 5 1/4" x 1 1/4") and The Confectioners’ Hand-Book and Practical Guide to the Art of Sugar Boiling, in all its branches. The manufacture of creams, fondants, liqueurs, pastilles, jujubes, comfits, lozenges (plain and medicated), ice creams and ices of every description; jams, jellies and marmalades, preserved and crystalized fruits, candied peel, English and Scotch pastry, cordials and syrups for American hot & iced beverages. Aerated waters of every description, by hand and machine, for bottle, syphon or fountain. Ginger beer, horehound and other fermented beers. Third edition. About 100 illustrations. Published by E. Condition: The Art of Confectionery – Condition – Near Fine – Green cover with gold gilt lettering on cover and spine in mylar cover. Minor wear to board edges and spine head and tail consistent with age and use. Light soiling to cover. Former owner ex-libris and Jan Longone Wine and Food Library sticker inside front cover. Foxing and toning throughout book. Gilt top edge. Edges soiled. The Confectioners’ Hand-Book – Condition – Very Good – burgundy embossed cloth cover with gilt lettering. Cover has some fading. Corners bumped and cover edges show some light wear. Front and back cover lightly soiled and stained. Spine fades with wear to head and tail. All consistent with age and use. Front and back hinges are split but intact. Foxing and toning to first few and last few pages. Please see photos.
